The unique flavour of Rock Samphire is perfect for pickling.
It can take strong vinegar and spices, but doesn't need them.
Delicious with cold meats and cheeses!


1Cut the Samphire into short stems of 3-5 leaves.

2Jar them up with the vinegar and spices

3Leave for a few weeks until all the samphire has lost it's bright green colour.


Fresh Rock Samphire

White Vinegar

Optional spices:

Rock Samphire Seeds

Coriander Seeds

Wild Garlic Seeds

Onion Seeds (nigela)

Mustard Seeds

Chilli Peppers
